The Queen's Platinum Jubilee shortbread recipe

This is such a fun and creative recipe to do with you little ones.





Use traditional icing mix and food dyes to create your own multi coloured shortbreads. Multi color dyes available here. We love using printed icing sheets to make these even more bright and colourful too. Use both to create fun and beautiful shortbread cookies. We think this floral design on Etsy here is perfect for a summer tea to celebrate the Queens Platinum Jubilee or choose the British flag for a very traditional celebration.

Make the shortbread


To make the shortbread you will need: Flour (Wholemeal or white) 150g Butter (or coconut oil) 100g Sugar (or sugar alternative such as honey) 50g Set the oven to 190 c Mix the butter and sugar or sugar alternative together until it makes a creamy batter mixture. Sive the flour and mix until even. Chill in the fridge for 30 minutes befor cutting into squares and pricking with a fork to make a decorative pattern. Put in the hot oven for 15-20 minutes or until a light golden brown colour Let cool

Make the icing


You will need:


150g icing sugar

Tsp water

Food colouring

Tupperwear for mixing the icing

Brand new paintbrushes for the icing Silver balls

Make a few colours of icing for decoration. This is so much fun and a great activity to help children learn colours and colors sets. We love to create icing in primary colours which are red, blue and yellow and then you can introduce mixing these to make new colours like purple and orange.


This is excellent for teaching your little ones about cause and effect, problem solving as they try to make the right color and it will help then with fine motor skills as they mix the colours.


Once you have your chosen colour separate a little less than half and mix with white to get your base colour.


Then you carefully mark out the British flag for your little one to fill in or if they would like to they can do it themselves! For the printing icing sheets, refrigerate the icing before and roll out flat. Cut into squares and place on the shortbread. Let this warm to room temperature.


You can then cut the printing ice sheets into squares and place gently onto the shortbread, pat down so there are no air bubbles. 3.


Add the silver balls


Once iced add silver balls to the edges and enjoy!
